Raspberry Crumble Bars

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup packed light brown sugar
  • 1/2 cup unsalted butter, at room temperature
  • 1 cup raspberries
  • 1/4 cup granulated sugar
  • 2 teaspoons cornstarch

Instructions:

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Spray an 8 by 8-inch baking dish with Pam baking spray.
  3. In a large mixing bowl, combine the flour, baking soda, salt, and brown sugar. Use your fingertips to break up any clumps of brown sugar.
  4. Add the room temperature butter to the dry ingredients. Using your fingers or hands, mix the butter into the mixture until it resembles small crumbs.
  5. In a separate bowl, mix the raspberries with the granulated sugar and cornstarch using an electric mixer on low speed until combined.
  6. Spread 3/4 of the crumb mixture evenly into the bottom of the prepared baking pan, pressing it down to create a crust.
  7. Spread the raspberry mixture over the crust, leaving about a 1/4-inch border around the edges.
  8. Sprinkle the remaining crumb mixture over the raspberries, lightly pressing it down.
  9. Bake in the preheated oven for 30 to 32 minutes, or until the top is a light golden brown.
  10. Remove from the oven and allow to cool completely before cutting into squares.
