Ingredients:
- 2 1/2 cups all-purpose flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup packed light brown sugar
- 1/2 cup unsalted butter, at room temperature
- 1 cup raspberries
- 1/4 cup granulated sugar
- 2 teaspoons cornstarch
Instructions:
- Preheat your oven to 375 degrees Fahrenheit.
- Spray an 8 by 8-inch baking dish with Pam baking spray.
- In a large mixing bowl, combine the flour, baking soda, salt, and brown sugar. Use your fingertips to break up any clumps of brown sugar.
- Add the room temperature butter to the dry ingredients. Using your fingers or hands, mix the butter into the mixture until it resembles small crumbs.
- In a separate bowl, mix the raspberries with the granulated sugar and cornstarch using an electric mixer on low speed until combined.
- Spread 3/4 of the crumb mixture evenly into the bottom of the prepared baking pan, pressing it down to create a crust.
- Spread the raspberry mixture over the crust, leaving about a 1/4-inch border around the edges.
- Sprinkle the remaining crumb mixture over the raspberries, lightly pressing it down.
- Bake in the preheated oven for 30 to 32 minutes, or until the top is a light golden brown.
- Remove from the oven and allow to cool completely before cutting into squares.
