FUNNEL CAKE BITES

INGREDIENTS:

  • 2 large eggs
  • 2 tablespoons sugar
  • 1 ¼ cups whole milk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon kosher salt
  • 4 cups vegetable oil
  • Powdered sugar, for garnish

INSTRUCTIONS:

  1. Step 1: In a large bowl, beat the eggs and sugar until they become foamy and pale yellow. Whisk in the milk and vanilla extract to the egg mixture.

     

  2. Step 2: In a separate bowl, sift together the flour, baking powder, and salt. Gradually add the sifted ingredients into the wet mixture, stirring until the batter is smooth and free of lumps (Avoid over-mixing).

     

  3. Step 3: Fill a pot with approximately 2 to 3 inches of oil and heat it to 375 degrees Fahrenheit over medium-high heat.

     

  4. Step 4: Take about 1/3 scoop of batter and carefully add it to the hot oil. Cook for about 2-3 minutes or until golden brown, then flip to the other side to ensure both sides are evenly golden.

     

  5. Step 5: Remove the funnel cake bites from the hot oil and place them on a paper-towel-lined plate.

     

  6. Step 6: Generously cover the funnel cake bites with powdered sugar and serve immediately.
