INGREDIENTS:

  • Homemade Apple Pie Filling or 1 (21 ounce) can apple pie filling
  • 6 (8 inch) flour tortillas
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup water

INSTRUCTIONS:

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9 x 13-inch baking dish with butter.
  3. If necessary, soften the tortillas in the microwave to make them more pliable for rolling.
  4. Place approximately one heaping 1/4 cup of pie filling slightly off the center of each tortilla and sprinkle them evenly with cinnamon.
  5. Roll up the tortillas and arrange them seam side down in the greased baking dish.
  6. In a medium saucepan, bring the butter, white sugar, brown sugar, and water to a boil.
  7. Reduce the heat and simmer for 3 minutes, stirring constantly.
  8. Pour the sauce over the enchiladas, and you can also sprinkle extra cinnamon on top if desired. Let them stand for about 45 minutes.
  9. Bake in the preheated oven for 20 minutes or until they turn golden.
  10. Serve the enchiladas warm with a scoop of vanilla ice cream, whipped cream, and drizzle your preferred amount of caramel sauce on top. Enjoy!
