- - 2 large egg whites unbeaten
- - 1 1/2 cups granulated sugar
- - 1/3 cup cold water
- - 1/4 teaspoon cream of tartar or 1 teaspoon corn syrup
- - 1 teaspoon vanilla extract
Instructions
- In the top of a double boiler, combine the unbeaten egg whites, granulated sugar, cold water, and cream of tartar or corn syrup. Mix thoroughly.
- Fill the bottom of the double boiler with about 2 inches of simmering water over medium heat. Place the top of the double boiler over the boiling water.
- Using an electric mixer set to high speed, beat the mixture constantly until it holds a stiff peak. This will take approximately 7 to 10 minutes.
- Remove the mixture from the heat.
- Add the vanilla extract and continue beating until the frosting is thick enough to spread.
- Use the frosting immediately to frost cakes or cupcakes.
