7-Minute Frosting

Ingredients
  

  • - 2 large egg whites unbeaten
  • - 1 1/2 cups granulated sugar
  • - 1/3 cup cold water
  • - 1/4 teaspoon cream of tartar or 1 teaspoon corn syrup
  • - 1 teaspoon vanilla extract

Equipment

  • - Double boiler
  • Electric Mixer
  • Mixing bowl

Method
 

  1. In the top of a double boiler, combine the unbeaten egg whites, granulated sugar, cold water, and cream of tartar or corn syrup. Mix thoroughly.
  2. Fill the bottom of the double boiler with about 2 inches of simmering water over medium heat. Place the top of the double boiler over the boiling water.
  3. Using an electric mixer set to high speed, beat the mixture constantly until it holds a stiff peak. This will take approximately 7 to 10 minutes.
  4. Remove the mixture from the heat.
  5. Add the vanilla extract and continue beating until the frosting is thick enough to spread.
  6. Use the frosting immediately to frost cakes or cupcakes.
