Potato toast

Ingredients:

  • 2 large potatoes, peeled and grated
  • 2 eggs
  • 1/4 cup all-purpose flour (optional for binding)
  • 1/4 cup grated cheese (cheddar, mozzarella, or your choice)
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon onion powder (optional)
  • 2 tablespoons chopped fresh herbs (parsley, chives, or green onions)
  • Oil for frying

Preparation Method:

  1. Prepare the Potatoes:
    • Peel and grate the potatoes, then wrap the grated potatoes in a clean kitchen towel and gently squeeze to remove excess moisture.
  2. Combine the Ingredients:
    • In a spacious mixing bowl, mix the grated potatoes with eggs, flour (if using), grated cheese, salt, pepper, garlic powder (if using), onion powder (if using), and chopped fresh herbs until thoroughly combined.
  3. Heat the Oil:
    • Warm a thin layer of oil in a non-stick skillet over medium heat until adequately heated.
  4. Shape and Cook the Potato Toast:
    • Spoon portions of the potato mixture onto the skillet and gently flatten into round shapes resembling toast.
    • Cook each side for 3-4 minutes, or until golden brown and crispy. Cook in batches if necessary.
  5. Drain and Serve:
    • Transfer the cooked potato toast to a plate lined with paper towels to absorb any excess oil.
    • Serve hot with preferred breakfast toppings like avocado, sliced tomatoes, or sour cream.
