Lemon Blueberry Bread

“Lemon Blueberry Bread is a delightful baked treat that perfectly combines the tangy zest of lemons with the natural sweetness of juicy blueberries. “

INGREDIENTS:

  • 1/3 cup melted butter
  • 1 cup white sugar
  • 1/4 cup freshly squeezed lemon juice
  • 2 eggs
  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup milk
  • 2 tablespoons grated lemon zest
  • 1 cup fresh or frozen blueberries
  • 2 tablespoons all-purpose flour

INSTRUCTIONS:

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Prepare your 8×4 inch loaf pan by greasing it with butter. Line the bottom and two sides of the pan with parchment paper, as shown in the photo.
  3. In a mixing bowl, beat together the butter, 1 cup of sugar, lemon juice, and eggs until well combined.
  4. In a separate bowl, combine the flour, baking powder, and salt. Stir these dry ingredients into the egg mixture alternately with the milk.
  5. In the same bowl where you combined the flour, add the blueberries and toss them in 2 tablespoons of flour. This helps prevent the blueberries from sinking in the batter.
  6. Now, fold the lemon zest and floured blueberries into the batter.
  7. Pour the batter into the prepared pan.
  8. Bake in the preheated oven for about 60 minutes, until a toothpick inserted into the center of the loaf comes out clean.
  9. Allow the bread to cool in the pan for 40 minutes on a wire rack.
