When it comes to potatoes, I typically am pretty boring. I love the idea of trying new versions, however, rarely have the time to make them. I usually just stick to mashed or loaded and call it good. When I came across this recipe from Mama Plus One, I was instantly intrigued.
Not only did the potatoes look amazing, but it really did not look too hard. I had grabbed a bag from the store and knew I had to try them.
Cheese? Check. Tons of flavor? Absolutely. See, these are the easiest potatoes I think I’ve ever made, and they’re a hit with everyone. I mean, who doesn’t love cheesy potatoes?
What are Mississippi Mud Potatoes, you ask? Well, that’s easy. They’re diced potatoes that are mixed up with a few goodies and baked until they’re tender throughout, crispy on top, and totally surrounded with creamy cheesiness.
INGREDIENTS:
- 6-7 cups potatoes, peeled and diced
- 2 cups cheddar cheese, grated
- 1 (1 lb) package turkey bacon, cooked and crumbled
- 1 teaspoon garlic salt
- 1 cup mayonnaise
- 1/2 cup green onions, thinly sliced
