INGREDIENTS:
- 1 package (3 ounces) lemon jelly
- 1 cup boiling water
- 8 ounces of cream cheese
- 1 cup granulated sugar
- 5 tablespoons of lemon juice
- 1 12 oz can of Carnation Evaporated Milk, well refrigerated
- Graham crackers, crushed
INSTRUCTIONS:
- Begin by dissolving the Jell-O in boiling water. Allow it to cool until it thickens slightly.
- In a blender, combine the cream cheese, sugar, and lemon juice. Blend until the mixture is smooth. Then, add the slightly thickened Jell-O and blend thoroughly.
- In a separate bowl, use a mixer to beat the Carnation milk until it becomes frothy. Incorporate the cream cheese and Jell-O mixture, and beat well until the mixture is smooth.
- Line the bottom of a 9 x 13-inch pan with crushed graham crackers.
- Spread the creamy filling over the graham cracker layer and then cover it with another layer of crushed graham crackers.
