INGREDIENTS:

  • 2 pounds boneless skinless chicken breasts
  • 1 large sweet potato-diced
  • 6 carrots cut up
  • 1/4 cup soy sauce
  • 1 cup orange juice
  • 1 cup pineapple juice
  • 1 teaspoon garlic salt
  • 1/4 teaspoon ginger
  • 1/3 cup brown sugar
  • 1 onion-chopped
  • 1 small can pineapple chunks

INSTRUCTIONS:

  1. Place cut-up carrots, sweet potatoes, and onion in the bottom of the crock pot.
  2. Place the chicken breasts over the vegetables.

  3. In a large bowl, combine brown sugar, pineapple juice, orange juice, soy sauce, ginger, and garlic salt.
  4. Pour the sauce mixture over the chicken, sweet potatoes, and carrots in the crock pot.
  5. About one hour before the cooking is done, add the small can of pineapple chunks to the crock pot.
  6. Cook on low heat until the chicken is tender, which may take around 6 hours.
  7. Optionally, you can cook on high for approximately 4 hours, depending on your crock pot’s settings.
