INGREDIENTS:
- 2 pounds boneless skinless chicken breasts
- 1 large sweet potato-diced
- 6 carrots cut up
- 1/4 cup soy sauce
- 1 cup orange juice
- 1 cup pineapple juice
- 1 teaspoon garlic salt
- 1/4 teaspoon ginger
- 1/3 cup brown sugar
- 1 onion-chopped
- 1 small can pineapple chunks
INSTRUCTIONS:
- Place cut-up carrots, sweet potatoes, and onion in the bottom of the crock pot.

Place the chicken breasts over the vegetables.
- In a large bowl, combine brown sugar, pineapple juice, orange juice, soy sauce, ginger, and garlic salt.
- Pour the sauce mixture over the chicken, sweet potatoes, and carrots in the crock pot.
- About one hour before the cooking is done, add the small can of pineapple chunks to the crock pot.
- Cook on low heat until the chicken is tender, which may take around 6 hours.
- Optionally, you can cook on high for approximately 4 hours, depending on your crock pot’s settings.
