Lemon Blueberry Loaf

INGREDIENTS:
- ½ cup butter
- ¾ cup sugar
- 2 eggs
- ½ cup light cream or milk
- 1 ½ cups flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 lemon juiced & zested
- 1 ¼ cup blueberries divided
- 1 tablespoon flour
- ¼ cup powdered sugar
INSTRUCTIONS:
Step 1: Preparing the Pan
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9×5-inch baking pan.
Step 2: Zest and Juice the Lemon
- Zest the lemon and set aside.
- Juice the lemon and set aside.
Step 3: Prepare the Batter
- In a mixing bowl, cream together the butter and sugar until well combined.
- Add the eggs and milk to the butter and sugar mixture. Stir in 1 tablespoon of lemon juice.
Step 4: Combine the Dry Ingredients
- In a separate bowl, combine the flour, baking powder, salt, and the lemon zest.
Step 5: Mix Wet and Dry Ingredients
- Gradually add the dry ingredient mixture to the butter mixture.
