Lemon Blueberry Loaf

INGREDIENTS:

  • ½ cup butter
  • ¾ cup sugar
  • 2 eggs
  • ½ cup light cream or milk
  • 1 ½ cups flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 lemon juiced & zested
  • 1 ¼ cup blueberries divided
  • 1 tablespoon flour
  • ¼ cup powdered sugar

INSTRUCTIONS:

Step 1: Preparing the Pan

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9×5-inch baking pan.

Step 2: Zest and Juice the Lemon

  1. Zest the lemon and set aside.
  2. Juice the lemon and set aside.

Step 3: Prepare the Batter

  1. In a mixing bowl, cream together the butter and sugar until well combined.
  2. Add the eggs and milk to the butter and sugar mixture. Stir in 1 tablespoon of lemon juice.

Step 4: Combine the Dry Ingredients

  1. In a separate bowl, combine the flour, baking powder, salt, and the lemon zest.

Step 5: Mix Wet and Dry Ingredients

  1. Gradually add the dry ingredient mixture to the butter mixture.
  2. Stir just until the ingredients are combined. Be careful not to overmix.

Step 6: Toss Blueberries
