Honey Bun Coffee Cake

INGREDIENTS:

  • 1 box yellow cake mix
  • 8-ounce tub sour cream
  • 4 eggs
  • 3/4 c. vegetable oil
  • 1 c brown sugar
  • 1 Tbsp ground cinnamon
  • 2 c. powdered sugar
  • 4 Tbsp. milk
  • 1 Tbsp. vanilla

INSTRUCTIONS:

  1. Preheat the oven to 325°F and prepare a 9×13-inch pan.
  2. In a large mixing bowl, combine the cake mix, eggs, oil, and sour cream. Stir by hand until large lumps are gone. Some lumps may remain, and that’s okay.
  3. Pour half of the batter into the prepared pan.
  4. In a medium bowl, combine brown sugar and cinnamon, mixing them well.
  5. Sprinkle the brown sugar mixture evenly over the batter in the cake pan, making sure to reach the edges.
  6. Carefully spread the remaining half of the batter on top, even though it may feel uncomfortable. The batter and sugar mixture will mix together.
  7. Take a butter knife and twirl it through the batter to create a swirly pattern.
  8. Bake for 40 minutes or until a toothpick comes out clean.
  9. While the cake is baking, mix together powdered sugar, vanilla, and milk. Use a fork to ensure any clumps are broken up.
  10. Once the cake is out of the oven, quickly pour the powdered sugar mixture over the warm cake.
  11. Allow the wonderful crackle to appear as it cools. Wait for about 15 minutes before cutting into it, if you can resist. Enjoy the reminiscent taste of a Honey Bun!
