Cheesy Shrimp Tortellini Alfredo Skillet

INGREDIENTS:

  • 1 lb. Cheese Tortellini
  • 1 lb. Jumbo Shrimp, cleaned and deveined
  • 2 tbsp. Butter
  • 1 Plum Tomato, diced
  • 1 tbsp. Fresh Basil, chopped
  • 2 Cloves Garlic, minced
  • 2 tsp. Prepared Horseradish
  • 1 tbsp. All Purpose Flour
  • 1/2 c. Heavy Cream
  • 1/4 c. Grated Pecorino Romano Cheese
  • Kosher Salt, to taste
  • Fresh Ground Black Pepper, to taste

INSTRUCTIONS:

  1. Cook the tortellini according to the package directions. Drain and set aside.
  2. In a large skillet, melt the butter over medium heat. Add the shrimp and cook until they are almost cooked through, which takes about 2-3 minutes.
  3. Add the diced tomato, chopped basil, minced garlic, and horseradish to the skillet. Continue to cook for an additional 1-2 minutes until the shrimp are fully cooked (white/pink and not clear).
  4. Stir in the all-purpose flour, ensuring it’s well incorporated with the other ingredients.
  5. Pour in the heavy cream and add the cheese. Mix the ingredients well to create a creamy sauce.
  6. Add the cooked tortellini to the skillet and stir until they are thoroughly coated with the creamy sauce.
  7. To serve, sprinkle extra cheese and chopped basil on top for garnish.
