Cheesy Shrimp Tortellini Alfredo Skillet

INGREDIENTS:
- 1 lb. Cheese Tortellini
- 1 lb. Jumbo Shrimp, cleaned and deveined
- 2 tbsp. Butter
- 1 Plum Tomato, diced
- 1 tbsp. Fresh Basil, chopped
- 2 Cloves Garlic, minced
- 2 tsp. Prepared Horseradish
- 1 tbsp. All Purpose Flour
- 1/2 c. Heavy Cream
- 1/4 c. Grated Pecorino Romano Cheese
- Kosher Salt, to taste
- Fresh Ground Black Pepper, to taste
INSTRUCTIONS:
- Cook the tortellini according to the package directions. Drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the shrimp and cook until they are almost cooked through, which takes about 2-3 minutes.
- Add the diced tomato, chopped basil, minced garlic, and horseradish to the skillet. Continue to cook for an additional 1-2 minutes until the shrimp are fully cooked (white/pink and not clear).
- Stir in the all-purpose flour, ensuring it’s well incorporated with the other ingredients.
- Pour in the heavy cream and add the cheese. Mix the ingredients well to create a creamy sauce.
- Add the cooked tortellini to the skillet and stir until they are thoroughly coated with the creamy sauce.
- To serve, sprinkle extra cheese and chopped basil on top for garnish.
