Sweet and Sticky Chicken Drumsticks

INGREDIENTS:

  • 1/2 cup balsamic vinegar
  • 1/2 cup honey
  • 1/2 cup light brown sugar, packed
  • 1/4 cup low-sodium soy sauce
  • 3 garlic cloves, minced
  • 12 chicken drumsticks
  • 1/4 cup chopped scallion

INSTRUCTIONS:

  1. In a large resealable bag, combine the balsamic vinegar, honey, brown sugar, soy sauce, and garlic cloves. Add the chicken drumsticks to the bag and seal it. Place the bag in the refrigerator and let the chicken marinate for 2 hours.
  2. Preheat your oven to 450 degrees Fahrenheit. Line a rimmed baking sheet with aluminum foil and place a cooling rack on top.
  3. Remove the chicken drumsticks from the bag, but be sure to reserve the marinade. Arrange the marinated drumsticks on the cooling rack.
  4. Bake the chicken in the preheated oven for about 30 minutes, or until the skin becomes caramelized and develops some dark spots.
  5. While the chicken is baking, take the leftover marinade and place it in a small saucepan. Bring it to a boil, then reduce the heat to a simmer. Cook the marinade over low heat until it thickens, which should take about 15 minutes.
  6. Once the marinade has thickened, use a pastry brush to generously brush it over the chicken drumsticks.
  7. Return the chicken to the oven for an additional 10 minutes to allow the marinade to further caramelize.
  8. When the chicken is done, garnish it with chopped scallions.
