SUPER EASY POT ROAST RECIPE

INGREDIENTS:
- 3 lb chuck roast, shoulder cut
- table salt and black pepper, to taste
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced or pressed
- 1 tbsp tomato paste
- 2 tbsp all-purpose flour
- 1 lb carrots, chunks
- 2 bay leaves
- fresh parsley or cilantro
- fresh thyme
- 2 cups beef broth
- 2 lb small yellow potatoes
INSTRUCTIONS:
Step 1: Season the Beef
- Begin by generously seasoning the beef on all sides with salt and pepper.
Step 2: Brown the Beef
- In a Dutch oven or heavy pot, heat some oil over medium-high heat.
- Brown the roast on all sides for about 15 minutes. This step helps lock in moisture and enhances the flavor of the meat. Once browned, transfer the roast to a plate.
Step 3: Sauté Onions and Garlic
- In the same pot with the remaining oil and beef juices, add the onions and garlic.
- Sauté until the onions become translucent, which should take about 2-3 minutes.
- Stir in the tomato paste, followed by the flour. The flour will absorb the oil and moisture in the pot.
Step 4: Add Broth and Seasonings
- Pour in the beef broth.
- Add a few sprigs of fresh thyme and the bay leaves for flavor.
Step 5: Return Beef and Add Vegetables
- Place the browned beef back into the pot.
- Arrange the carrots and potatoes around the beef in the pot.
Step 6: Cook in the Oven
- Cover the pot and transfer it to the oven preheated to 350 degrees Fahrenheit.
