SUPER EASY POT ROAST RECIPE

  • 3 lb chuck roast, shoulder cut
  • table salt and black pepper, to taste
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced or pressed
  • 1 tbsp tomato paste
  • 2 tbsp all-purpose flour
  • 1 lb carrots, chunks
  • 2 bay leaves
  • fresh parsley or cilantro
  • fresh thyme
  • 2 cups beef broth
  • 2 lb small yellow potatoes

INSTRUCTIONS:

Step 1: Season the Beef

  1. Begin by generously seasoning the beef on all sides with salt and pepper.

Step 2: Brown the Beef

  1. In a Dutch oven or heavy pot, heat some oil over medium-high heat.
  2. Brown the roast on all sides for about 15 minutes. This step helps lock in moisture and enhances the flavor of the meat. Once browned, transfer the roast to a plate.

Step 3: Sauté Onions and Garlic

  1. In the same pot with the remaining oil and beef juices, add the onions and garlic.
  2. Sauté until the onions become translucent, which should take about 2-3 minutes.
  3. Stir in the tomato paste, followed by the flour. The flour will absorb the oil and moisture in the pot.

Step 4: Add Broth and Seasonings
