Sloppy Joe Casserole
Ingredients:
- 1 lb. ground beef, 85% lean
- ½ cup diced onions
- 1 15.5 oz can Manwich sauce
- 2 ½ cups chicken broth
- 1 14.5 oz can diced tomatoes, not drained
- ¾ pound farfalle pasta, uncooked
- 8 oz. Velveeta cheese, cubed
- 1 cup corn, frozen or drained from a can
- 1 ½ cups shredded cheddar cheese
Directions:
- Preheat the oven to 375°F (190°C).
- In a large skillet or pot over medium-high heat, cook the ground beef with diced onions until the beef is browned and the onions are softened. Drain any excess grease.
- Stir in the Manwich sauce, chicken broth, and undrained diced tomatoes. Bring the mixture to a gentle boil.
- Add the uncooked farfalle pasta, ensuring it’s submerged and mixed well. Cover the pot and let it simmer gently, stirring occasionally.
- Lower the heat and mix in the corn. Add the cubed Velveeta cheese, covering the pot to allow the cheese to melt fully. Stir to combine evenly.
- Transfer the cheesy mixture into a lightly greased 9×13-inch casserole dish, spreading it out evenly.
- Sprinkle the shredded cheddar cheese over the top.
- Cover the casserole dish and bake for 15 minutes.
- Once done, it’s ready to serve! Enjoy with a side of warm cornbread if desired.
