RECIPE :
French Onion Skillet Chicken
INGREDIENTS:
- ⅓ C. Olive oil
- 2 Large sweet onions sliced into rings
- 6 Boneless skinless chicken thighs
- ½ tsp. Thyme
- ½ tsp Dried sage
- Salt and pepper to taste
- 2 C. Beef broth
- 1 tsp. Worcestershire sauce
- 2 tsp. Balsamic vinegar
- 2 Tbsp. Flour mixed in a bit of water
- 1 C. Shredded swiss cheese
INSTRUCTIONS:
- Preheat the oven to 350 degrees.
- Add the olive oil to an ovenproof skillet over medium heat on the stove, and sauté the onions in it until they are caramelized, about 15 minutes.
- Remove the onions and set aside.
- Season the chicken with salt and pepper to taste, thyme, and sage. Sear the chicken on both sides, browning it well and evenly. Remove the chicken and set aside.
- Stir the beef broth into the skillet along with the Worcestershire sauce and the balsamic vinegar.
- Whisk in the flour that has been dissolved in a bit of water.
- Sauté the sauce until thickened.
- Return the chicken and onions to the skillet and top with the cheese.
- Bake in the oven for 15 minutes or until the chicken is cooked through.
