INGREDIENTS:

  • 2 tablespoon of oil
  • 2 large garlic cloves crushed
  • 1 onion roughly diced
  • 1 teaspoon paprika
  • ½ teaspoon cayenne pepper
  • ½ teaspoon ground coriander
  • pinch chili flakes
  • 4 tablespoon peanut butter (crunchy or smooth)
  • 400g can of full fat coconut milk
  • 2 tablespoon tomato puree
  • 2 400g tins of chickpeas drained
  • 1 veg stock cube/pot
  • 1 juice lime

INSTRUCTIONS:

Preparing the Onion and Garlic:

  1. Begin by finely dicing the onion and garlic.

Sautéing Onion and Garlic: 2. Heat a large pot with oil and add the diced onion and garlic.

  1. Cook them over medium heat for a few minutes until they have softened.

Adding Spices: 4. To the pot, add 1 teaspoon of paprika, ½ teaspoon of cayenne pepper, ½ teaspoon of ground coriander, and a pinch of chili flakes.

  1. Mix the spices into the onion and garlic.

Incorporating Main Ingredients: 6. Now, introduce the following ingredients to the pot: coconut milk, 4 tablespoons of peanut butter, 2 tablespoons of tomato puree, 2 cans of drained chickpeas, a vegetable stock cube or pot, and the juice of 1 lime.

  1. Stir all the ingredients together.

Thickening the Mixture: 8. Cook the mixture on high heat for 5-6 minutes until it starts to thicken.
