Ingredients

  • 4 slices bacon
  • 3 ears of corn
  • 2 stalks celery, chopped
  • 2 carrots, diced
  • ½ large onion, diced
  • 2 gold potatoes, chunked into ½ inch bites
  • ½ red pepper, diced
  • 1 teaspoon paprika
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • teaspoon ground cayenne pepper
  • 6 cups low-sodium chicken broth
  • 3 tablespoons flour
  • ¼ cup heavy cream
  • ¼ cup fresh chopped parsley
  • Salt & Pepper to taste

Instructions

  • Cook the bacon until crispy, either in a skillet or on a baking sheet in the oven at 375°F (190°C) for approximately 15 minutes. Remove and drain on paper towels, then chop coarsely.
  • Shuck the corn and remove the silk. Cut the kernels from the ears of corn.
  • In a large stockpot or Dutch oven, heat the bacon grease over medium heat. Add corn, celery, carrots, onions, and potatoes. Cook for 5-7 minutes, stirring occasionally. Then add red pepper and cook for an additional 3 minutes, stirring occasionally.
  • Add paprika, onion powder, garlic powder, and ground cayenne pepper. Cook for 30 seconds, stirring constantly.
  • Pour in chicken broth, bring to a low boil, and simmer until potatoes are soft.
  • Remove one cup of broth from the pot (avoiding vegetables) and mix with flour to create a slurry. Whisk this mixture into the soup and bring back to a low boil. Simmer until slightly thickened, about 2-3 minutes.
  • Stir in heavy cream. Just before serving, add chopped bacon and parsley. Season with salt and pepper to taste. Enjoy!
