INGREDIENTS:

Chicken Cobb Salad:

  • 6 oz bacon (6 slices) chopped and browned
  • 1 medium head romaine lettuce 5 cups chopped, rinsed and dried
  • 2 cooked chicken breasts from a cooked chicken
  • 2 hard-boiled eggs
  • 1 large avocado sliced
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion thinly sliced
  • 1/2 cup blue cheese crumbled (or feta cheese)
  • 2 Tbsp parsley finely chopped

Cobb Salad Dressing:

  • 3 Tbsp balsamic vinegar
  • 1 Tbsp dijon mustard
  • 1 garlic clove pressed or finely minced
  • 1/3 cup extra virgin olive oil
  • 1/4 tsp salt
  • 1/8 tsp black pepper

INSTRUCTIONS:

Step 1: Prepare the Salad Ingredients

  1. In a skillet, sauté the chopped bacon over medium heat until it’s browned and crisp, which should take about 5 minutes. Transfer the cooked bacon to a paper towel-lined plate to cool.
  2. Cook the hard-boiled eggs until they’re hard-boiled, then peel and quarter them.
  3. Chop, rinse, and spin dry the romaine lettuce. Arrange the lettuce on a serving platter.
  4. Arrange the remaining salad ingredients (chicken, eggs, avocado, cherry tomatoes, red onion, blue cheese, and bacon) in rows over the bed of romaine lettuce. Sprinkle the finely chopped fresh parsley evenly over the salad.

Step 2: Prepare the Dressing

  1. In a mason jar or a container with a lid, combine the dressing ingredients: red wine vinegar, olive oil, Dijon mustard, honey, salt, and pepper. Put the lid on and shake vigorously until the dressing is well combined.

Step 3: Serve

  1. Just before serving, drizzle the dressing over the salad. You can let guests add their own dressing to taste if you prefer.
