Ingredients

  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup softened butter
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 3.4 ounces instant vanilla pudding mix
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 cups semi-sweet chocolate chips

Instructions

  • Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
  • In a medium-sized bowl, whisk together the flour and baking soda. Set aside.
  • In a separate large bowl, cream together the softened butter, brown sugar, and granulated sugar until well combined and fluffy.
  • Beat in the instant vanilla pudding mix until fully incorporated.
  • Add the eggs and vanilla extract, beating on medium speed until the mixture is smooth.
  • Gradually add the flour mixture to the wet ingredients, beating until completely incorporated. Then, fold in 2 cups of semi-sweet chocolate chips.
  • Lightly grease two large baking sheets. Using a heaping 1.5-inch cookie scoop, place rounded cookie dough balls about 2 inches apart on the prepared baking sheets (they will spread during baking, so ensure proper spacing).
  • Bake for 12 minutes, then remove the pans from the oven. While the cookies are still hot, press the remaining cup of chocolate chips evenly into the tops of the cookies.
  • Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool further. Enjoy the cookies while they are still warm.

Notes

For extra flavor, you can use chocolate chunks instead of chocolate chips, or mix in nuts such as walnuts or pecans for added texture.
