Zucchini Cheese Bread
Ingredients:
- 1 1/2 cups zucchini, shredded (keep the moisture)
- 1/4 cup green onion, sliced (optional for a bit of bite)
- 2 large eggs
- 3/4 cup sour cream (for richness)
- 1/4 cup butter, melted and cooled down
- 1 1/2 cups cheddar cheese, shredded (for that cheesy goodness)
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions:
Prep Work:
- Preheat your oven to 350°F (175°C). Grease a loaf pan with a bit of butter or non-stick spray.
Mix Wet Ingredients:
- In a large bowl, whisk together the eggs, sour cream, and cooled melted butter until well combined.
- Stir in the shredded zucchini and green onions (if using).
Add Cheese:
- Mix in the shredded cheddar cheese, saving a little to sprinkle on top before baking.
Combine Dry Ingredients:
- In a separate bowl, combine the flour, baking powder, baking soda, and salt by sifting them together.
Bring It Together:
- Slowly incorporate the dry ingredients into the wet mix, stirring until they are just blended together. Be careful not to overmix.
Bake:
- Pour the batter into the prepared loaf pan. Sprinkle the top with the reserved cheddar cheese.
- Place in the preheated oven and bake for approximately 45-50 minutes, or until a toothpick inserted into the middle comes out without any batter sticking to it.
Cool and Serve:
- Allow the loaf to rest in the pan for roughly 10 minutes, then move it onto a wire rack to cool down fully.
