Zucchini Cheese Bread

Ingredients:

  • 1 1/2 cups zucchini, shredded (keep the moisture)
  • 1/4 cup green onion, sliced (optional for a bit of bite)
  • 2 large eggs
  • 3/4 cup sour cream (for richness)
  • 1/4 cup butter, melted and cooled down
  • 1 1/2 cups cheddar cheese, shredded (for that cheesy goodness)
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions:

Prep Work:

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan with a bit of butter or non-stick spray.

Mix Wet Ingredients:

  1. In a large bowl, whisk together the eggs, sour cream, and cooled melted butter until well combined.
  2. Stir in the shredded zucchini and green onions (if using).

Add Cheese:

  1. Mix in the shredded cheddar cheese, saving a little to sprinkle on top before baking.

Combine Dry Ingredients:

  1. In a separate bowl, combine the flour, baking powder, baking soda, and salt by sifting them together.

Bring It Together:

  1. Slowly incorporate the dry ingredients into the wet mix, stirring until they are just blended together. Be careful not to overmix.

Bake:

  1. Pour the batter into the prepared loaf pan. Sprinkle the top with the reserved cheddar cheese.
  2. Place in the preheated oven and bake for approximately 45-50 minutes, or until a toothpick inserted into the middle comes out without any batter sticking to it.

Cool and Serve:

  1. Allow the loaf to rest in the pan for roughly 10 minutes, then move it onto a wire rack to cool down fully.
