Southern Sweet Potato Pie

Ingredients:

  • 3-4 baked sweet potatoes
  • 1 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/2 tsp allspice
  • 1 tsp vanilla extract
  • 1 tsp lemon extract (optional)
  • 1 cup evaporated milk (more if needed)
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 4 large eggs
  • 1 stick butter (softened)
  • 2 regular pie shells or 1 deep dish pie shell

Instructions:

1️⃣ Prep Sweet Potatoes: Begin by baking or boiling the sweet potatoes until tender. Once cooked, peel and mash them thoroughly to prepare for the pie filling.

2️⃣ Preheat Oven & Prep Pie Shells: Preheat your oven to 350°F (175°C). Bake the pie shells until they are a very light brown to partially cook them and prevent sogginess.

3️⃣ Mix Ingredients: In a large mixing bowl, combine the mashed sweet potatoes with nutmeg, cinnamon, allspice, vanilla extract, lemon extract (if using), evaporated milk, sugar, brown sugar, eggs, and softened butter. Whisk together until the mixture is smooth and free of lumps, ensuring a creamy filling.

4️⃣ Fill Pie Shells: Pour the pie filling into the prepared pie shells, dividing evenly if using two regular shells, or pour all into a deep dish shell.

5️⃣ Bake: Bake the pies in the preheated oven for about 50 minutes, or until they are firm to the touch and fully set.

6️⃣ Serve: Allow the pies to cool before serving. These sweet potato pies offer a delightful mix of sweet and spicy flavors, all encased in a deliciously flaky crust.
