Ingredients
- 4 large bell peppers
- 1 lb lean ground beef
- 1 ounce taco seasoning
- 1/2 onion, diced
- 1 can chopped green chiles (4.5 ounce can)
- 1/4 cup Red Enchilada Sauce, Medium
- 2 cups Mexican blend cheese, shredded
Instructions
- Preheat the oven to 350°F. Line a baking sheet with foil and set aside.
- In a medium skillet, heat the ground beef over medium-high heat, crumbling it as you cook. If there is excess oil after the beef is fully cooked, drain it and return the skillet to the heat.
- Stir in the taco seasoning and mix until the beef is well coated. Add the diced onions and cook them with the beef.
- When the beef is almost cooked through and the onions begin to turn translucent, stir in the chopped green chiles and enchilada sauce. Turn off the heat and set aside.
- Cut the tops off each bell pepper and hollow out the insides, removing the ribs and seeds. Place each pepper on the prepared baking sheet.
- To stuff each pepper, start with several spoonfuls of beef mixture, followed by a layer of shredded cheese, and then fill nearly to the top with more beef mixture. Top with another layer of shredded cheese (use about 1/2 cup cheese per pepper, adjust as needed based on the size of the peppers), and place the pepper top back on.
- Repeat the stuffing process with the remaining peppers.
- Bake the stuffed peppers for 30-40 minutes or until the peppers are tender and the cheese is melted and bubbly.
- Serve immediately with sour cream and cilantro, if desired.
