RECIPE :
Keto frittata
INGREDIENTS:
- 4 slices bacon
- 1 cup mushrooms sliced
- 2 tablespoons Butter
- 4 ounces baby spinach
- 1 cup Cheddar Cheese shredded
- 6 large eggs
- 1/4 cup Heavy Cream
- 1/2 teaspoon Salt
- 1/2 teaspoon Pepper
INSTRUCTIONS:
- Preheat the oven to 180C/355F.
- Heat a cast iron frying pan over high heat.
- Dice the bacon and sauté for 4 minutes; then, add the butter.
- Incorporate the mushrooms and sauté for an extra 3 minutes.
- Add the spinach and cook for 2 minutes until it wilts; turn off the heat.
- Sprinkle cheddar over the sautéed ingredients.
- In a mixing bowl, whisk together eggs, cream, salt, and pepper.
- Pour the egg mixture into the pan and transfer it to the oven.
- Bake for 20 minutes or until the eggs are no longer jiggly.
- Remove from the oven, slice into 4 pieces, and serve.
