Keto frittata

INGREDIENTS:

  • 4 slices bacon
  • 1 cup mushrooms sliced
  • 2 tablespoons Butter
  • 4 ounces baby spinach
  • 1 cup Cheddar Cheese shredded
  • 6 large eggs
  • 1/4 cup Heavy Cream
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper

INSTRUCTIONS:

  1. Preheat the oven to 180C/355F.
  2. Heat a cast iron frying pan over high heat.
  3. Dice the bacon and sauté for 4 minutes; then, add the butter.
  4. Incorporate the mushrooms and sauté for an extra 3 minutes.
  5. Add the spinach and cook for 2 minutes until it wilts; turn off the heat.
  6. Sprinkle cheddar over the sautéed ingredients.
  7. In a mixing bowl, whisk together eggs, cream, salt, and pepper.
  8. Pour the egg mixture into the pan and transfer it to the oven.
  9. Bake for 20 minutes or until the eggs are no longer jiggly.
  10. Remove from the oven, slice into 4 pieces, and serve.
