Ingredients

  • 4 cups all-purpose flour
  • 1/3 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup very cold unsalted butter
  • 1 1/4 cups buttermilk
  • 1 large egg
  • 1 cup raisins
  • 2 tablespoons butter
  • 2 tablespoons buttermilk
  • 1/2 teaspoon sugar

Instructions

  • Preheat your oven to 375°F (190°C) and cover a large baking sheet with parchment paper.
  • In a large bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt. Grate the very cold unsalted butter into the flour mixture and stir until evenly coated.
  • In a separate bowl, whisk together the buttermilk and egg. Stir the buttermilk mixture and raisins into the flour mixture until just combined. Turn the dough out onto a lightly floured surface and knead it for about 30 seconds. Place the dough on the prepared baking sheet and use a sharp serrated knife to score an "X" on the top of the loaf.
  • Melt the 2 tablespoons of butter, then combine it with the 2 tablespoons of buttermilk. Brush this mixture over the loaf and sprinkle it lightly with sugar.
  • Bake the bread for about 40-45 minutes, or until a toothpick inserted in the center comes out clean. Check the loaf after 30 minutes to ensure it's not browning too quickly. If it browns too fast, cover it loosely with aluminum foil. Once baked to your liking, transfer the bread to a wire rack to cool slightly. This bread is best enjoyed warm with soft butter.

Notes

Irish Soda Bread is best served fresh but can be stored in an airtight container for up to 2 days. Reheat slices in the oven or toaster oven to revive the crust.
