Fudgy Brownie Cookies

Ingredients:

  • 4 tablespoons salted butter (57 grams, ½ stick)
  • 1 pound chopped semisweet chocolate (454 grams)
  • 4 large eggs (200 grams, room temperature)
  • 1½ cups granulated sugar (300 grams)
  • 1 teaspoon pure vanilla extract (4 grams)
  • ½ cup all-purpose flour (60 grams, sifted)
  • ½ teaspoon baking powder (2 grams)
  • 12 ounces milk chocolate chips (340 grams)
  • Crushed peppermint (optional, for topping)

Directions:

1️⃣ Melt the butter and chocolate together over simmering water until smooth.

2️⃣ In a stand mixer, beat the eggs, sugar, and vanilla until well combined. Gradually add the melted chocolate mixture, then mix in the flour and baking powder until fully incorporated.

3️⃣ Fold in the chocolate chips. Freeze the batter for 1 hour to firm it up.

4️⃣ Preheat the oven to 350°F (175°C). Scoop the chilled batter onto lined baking sheets, leaving space between each cookie.

5️⃣ Bake for about 10 minutes until the cookies crack on top.

6️⃣ Allow the cookies to cool on the baking sheet for 10 minutes, then transfer them to a wire rack to cool completely.

7️⃣ For a peppermint version, sprinkle crushed peppermint over the cookies after baking.
