Delicious Huli Huli Chicken

Ingredients:

  • ½ cup brown sugar, packed
  • ½ cup ketchup
  • ½ cup soy sauce
  • ½ cup pineapple juice
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic, minced
  • 2 teaspoons rice vinegar
  • 2 teaspoons sesame oil
  • 12 boneless, skinless chicken thighs
  • Optional garnishes: green onions, pineapple rings

Instructions:

  1. In a bowl, whisk together the pineapple juice, ketchup, soy sauce, and brown sugar until well combined. Then add in the minced garlic, ginger paste, sesame oil, and rice vinegar. Set aside one cup of this marinade and store it in the fridge; this will be used for basting the chicken while it cooks.
  2. Place the chicken thighs in a sturdy freezer bag and pour the remaining marinade over them. Ensure the chicken is fully coated with the marinade. Marinate the chicken in the fridge overnight. If unable to marinate overnight, marinate for at least 8 hours.
  3. Before grilling, lightly oil the grill to prevent sticking. Remove the chicken from the marinade (discard the used marinade) and place the chicken on the grill. Cook for approximately 3 minutes on one side, then flip.
  4. Brush some of the reserved marinade onto the chicken, then flip and cook for another 3 minutes. Repeat this process, brushing on more marinade with each flip, until the chicken is fully cooked. This usually takes about 10 minutes. Use a meat thermometer to ensure the internal temperature reaches 165 degrees Fahrenheit.
  5. Once cooked, optionally garnish the chicken with green onions and pineapple rings before serving.
