Ingredients
- 5 Italian sausage links
- 2 tablespoons oil
- 1 green bell pepper
- 1 red bell pepper
- 1 yellow onion
- 2 cups sugar-free marinara sauce, such as Rao’s
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes
- 1 teaspoon salt
- 1 teaspoon cracked pepper
- Fresh minced parsley
Instructions
- Heat a large skillet over medium-high heat and add the oil. Once the oil is hot, add the Italian sausage links and sear them on all sides. Ensure they're only browned on the outside and not fully cooked through.
- While the sausage is cooking, slice the green bell pepper, red bell pepper, and yellow onion into strips, then place them in the bottom of a crockpot.
- Pour the sugar-free marinara sauce over the peppers and onions, then sprinkle in the Italian seasoning, red pepper flakes, salt, and cracked pepper. Stir everything together to combine.
- Arrange the partially cooked sausage links over the top of the peppers and onions in the crockpot, gently pressing them down.
- Cover the crockpot and cook on high for 3-4 hours or on low for 6-8 hours, until the sausage is fully cooked through and the vegetables are tender.
- Once cooked, remove the sausage from the crockpot and slice them into chunks. Return the sliced sausage to the crockpot and gently stir to coat everything in the sauce.
- Sprinkle the dish with fresh minced parsley before serving.
