  • 6 slices bacon uncooked
  • 2 cups cheddar cheese shredded
  • 2 green onions diced
  • 3 large russet potatoes washed and dried
  • 1 tablespoon Italian seasoning blend
  • 1 tablespoon oil vegetable, canola, or olive oil
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 375°F.
  2. Cut the potatoes into ¾-inch thick rounds and arrange them evenly on a large baking sheet.
  3. Lightly brush both sides of each potato slice with oil using a pastry brush. Season with salt and pepper.
  4. Bake the potatoes in the preheated oven for 25 minutes at 375°F.
  5. Meanwhile, cook bacon in a frying pan over low heat, turning occasionally until fully cooked and crispy. Once done, set the bacon aside to cool, then crumble it; reserve the bacon drippings for later use.
