Method
- Preheat the oven to 375°F.
- Cut the potatoes into ¾-inch thick rounds and arrange them evenly on a large baking sheet.
- Lightly brush both sides of each potato slice with oil using a pastry brush. Season with salt and pepper.
- Bake the potatoes in the preheated oven for 25 minutes at 375°F.
- Meanwhile, cook bacon in a frying pan over low heat, turning occasionally until fully cooked and crispy. Once done, set the bacon aside to cool, then crumble it; reserve the bacon drippings for later use.
- Take the potato slices out of the oven and brush all sides with the reserved bacon drippings.
- Return the potatoes to the oven and bake for an additional 10 minutes.
- Once done, top the potatoes with grated cheese and crumbled bacon. Place them back in the oven until the cheese melts, approximately 5 minutes.
- Remove the potato slices from the oven, sprinkle with Italian seasoning and green onions.
- Serve immediately, accompanied by sour cream.
Notes
Leftovers are a breeze to handle. Store them in an airtight container in the fridge and simply reheat in the microwave, oven, or on the stovetop.
