Zucchini Cheese Muffins
Ingredients:
- 1 medium zucchini, grated (do not squeeze out the moisture)
- 1/4 red capsicum (optional), finely diced
- 1 cup grated cheese(s) (mix of your favorite cheeses)
- 2 large eggs
- Salt & pepper to taste, plus preferred seasonings
- 125g (1 cup) all-purpose flour
- 1 tsp baking powder
- Butter, for greasing the muffin tin
Instructions:
- Preheat your oven to 180°C (350°F). Grease a 9-cup muffin tin with butter.
- In a large mixing bowl, combine grated zucchini, finely diced red capsicum (if using), grated cheese, and eggs. Mix well until evenly distributed. Season with salt, pepper, and preferred seasonings.
- Sift all-purpose flour and baking powder into the wet mixture. Gently fold until just combined. Avoid overmixing to keep the muffins light and fluffy.
- Divide the batter evenly among the greased muffin cups, filling each about 3/4 full.
- Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the muffins are golden on top and a toothpick inserted into the center comes out clean.
- Once baked, remove the muffin tin from the oven. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely. These muffins are delicious served warm but can also be enjoyed at room temperature.
