Zucchini Cheese Muffins

Ingredients:

  • 1 medium zucchini, grated (do not squeeze out the moisture)
  • 1/4 red capsicum (optional), finely diced
  • 1 cup grated cheese(s) (mix of your favorite cheeses)
  • 2 large eggs
  • Salt & pepper to taste, plus preferred seasonings
  • 125g (1 cup) all-purpose flour
  • 1 tsp baking powder
  • Butter, for greasing the muffin tin

Instructions:

  1. Preheat your oven to 180°C (350°F). Grease a 9-cup muffin tin with butter.
  2. In a large mixing bowl, combine grated zucchini, finely diced red capsicum (if using), grated cheese, and eggs. Mix well until evenly distributed. Season with salt, pepper, and preferred seasonings.
  3. Sift all-purpose flour and baking powder into the wet mixture. Gently fold until just combined. Avoid overmixing to keep the muffins light and fluffy.
  4. Divide the batter evenly among the greased muffin cups, filling each about 3/4 full.
  5. Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the muffins are golden on top and a toothpick inserted into the center comes out clean.
  6. Once baked, remove the muffin tin from the oven. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely. These muffins are delicious served warm but can also be enjoyed at room temperature.
