RECIPE :

Roasted sweet potatoes

INGREDIENTS:

  • 3 Sweet potatoes, peeled and cut into bite size cubes
  • 2 tsp olive oil
  • 1 tbsp butter
  • 1 tbsp of brown sugar (more if you want it sweeter)
  • 1 tsp of ground cinnamon
  • 1/4 tsp of ground nutmeg
  • Pinch of ground ginger
  • Sea salt, to taste

INSTRUCTIONS:

  1. Begin by preheating your oven to 350 degrees Fahrenheit.
  2. Then, take a small baking dish and coat it with cooking spray to prevent sticking.
  3. Next, peel the sweet potatoes and cut them into bite-sized cubes.
  4. Arrange these cubes in the prepared baking dish.In a separate microwave-safe container, melt the butter.
  5. Once melted, drizzle it over the sweet potatoes, followed by the olive oil, brown sugar, cinnamon, nutmeg, ginger, and a pinch of salt.
  6. If you prefer a sweeter or spicier flavor, feel free to adjust the amount of brown sugar or cinnamon to your liking.
  7. Now, gently toss the sweet potatoes in the dish to ensure an even coating of the flavorful mixture.
  8. Place the baking dish in the preheated oven and bake for approximately 60 minutes.
  9. Remember to stir the sweet potatoes once or twice during this time to ensure they roast evenly.
  10. Once they have a beautiful golden-brown hue and are fork-tender, your roasted sweet potatoes are ready to enjoy.
