Mandarin Orange Salad

INGREDIENTS:

  • 1 (3 oz) box of orange jello mix
  • 1 (3 oz) box of vanilla pudding (cook & serve, NOT instant pudding)
  • 1 (3 oz) box of tapioca pudding powder (IMPORTANT: It must be cook & serve powdered tapioca mix, like the Jell-O brand)
  • 2 cups of water
  • 1 (11 oz) can of mandarin oranges, drained
  • 1 cup of non-dairy whipped topping

INSTRUCTIONS:

Step 1: Prepare Puddings and Jello

  1. In a medium saucepan, combine the contents of the orange jello mix, vanilla pudding (cook & serve, not instant), and tapioca pudding powder. Mix these dry ingredients together.

Step 2: Add Water

  1. Pour 2 cups of water into the saucepan with the dry pudding mixes. Stir until well combined.

Step 3: Cook and Thicken

  1. Cook the mixture over medium heat, stirring frequently to prevent sticking and scorching.
  2. Continue to cook until the mixture boils and thickens.

Step 4: Cool and Refrigerate

  1. Pour the thickened gelatin mixture into a container and allow it to cool to room temperature on the counter.
  2. Once at room temperature, cover the container and refrigerate the mixture until it is completely set. This typically takes a minimum of 4 to 6 hours.

Step 5: Add Whipped Topping and Mandarin Oranges

  1. After the gelatin is firmly set, stir in the non-dairy whipped topping and the drained mandarin oranges. Gently mix until they are thoroughly integrated into the salad.
  2. The resulting jello salad should be thick, light, and fluffy.

Step 6: Refrigerate Until Ready to Serve

  1. Keep the Mandarin Orange Jello Salad in the refrigerator until you are ready to serve.
