Creamed New Potatoes and Peas

Ingredients:

  • 15 New Baby Potatoes, scrubbed clean and cut in half
  • 1 cup frozen peas
  • 2 tablespoons butter
  • 1/4 cup onion, diced
  • 2 tablespoons flour
  • 2 cups milk
  • Salt and pepper to taste
  • Fresh chives

Instructions:

  1. Place the baby potatoes in a pot of salted boiling water and cook for approximately 8 minutes. In the last 3 minutes of cooking, add the frozen peas. Drain the potatoes and peas, then set them aside.
  2. In the same pan used for boiling, melt the butter. Add the diced onion and cook for about 4 minutes until translucent.
  3. Sprinkle the flour into the pan and stir to combine. Gradually pour in the milk, whisking continuously as you do so. The mixture will begin to thicken. Season with salt and pepper to taste.
  4. Stir in the drained potatoes and peas, ensuring they are well coated with the sauce.
  5. Garnish with fresh chives before serving.
