- 3/4 cup Carrots, matchstick-cut
- 2 cups Broccoli Florets, diced
- 3 packages Instant Ramen Noodles (discard seasoning packets)
Sauce Ingredients:
- 1/3-1/2 cup Chicken Broth
- 2 tsp Cornstarch
- 3 tbsp Light Soy Sauce
- 1 tbsp Light Brown Sugar
- 2 tsp Toasted Sesame Oil
- 1 tbsp Rice Vinegar
- 2 tbsp Hoisin Sauce
- 2 tsp Sriracha Sauce (or to taste)
Instructions:
- Cook the Lean Ground Beef: In a large skillet over medium heat, warm 2 tablespoons of olive oil. Add the lean ground beef and cook until browned and cooked through, breaking it apart with a spoon. Remove cooked beef from the skillet and set aside.
- Sauté the Vegetables: In the same skillet, heat the remaining 2 tablespoons of olive oil over medium heat. Add sliced bell pepper, sliced onion, grated ginger, and finely chopped garlic. Sauté until vegetables are tender-crisp, stirring occasionally.
- Prepare the Sauce: In a small bowl, whisk together chicken broth, cornstarch, light soy sauce, light brown sugar, toasted sesame oil, rice vinegar, hoisin sauce, and Sriracha sauce until well combined.
- Combine Ingredients: Return the cooked ground beef to the skillet with sautéed vegetables. Add matchstick-cut carrots and diced broccoli florets to the skillet, stirring to combine.
- Cook the Noodles: Meanwhile, cook instant ramen noodles according to package instructions. Drain and set aside.
- Assemble the Chow Mein: Add cooked noodles to the skillet with beef and vegetables. Pour prepared sauce over the mixture and toss everything together until well coated.
- Serve and Enjoy: Transfer Chicken Chow Mein to serving plates or bowls. Garnish with chopped green onions or sesame seeds, if desired.
