Ingredients
  

  • 2 to 3 tablespoons unsalted butter
  • 1 medium onion finely chopped (about 1 cup)
  • 2 to 3 cups finely chopped cooked corned beef
  • 2 to 3 cups chopped cooked potatoes preferably Yukon gold
  • Kosher salt and freshly ground black pepper
  • Chopped fresh parsley

Method
 

Sauté the Onions:
  1. Heat butter in a large skillet (preferably cast iron) over medium heat.
  2. Add the onion and cook for a few minutes, until translucent.
Add the Potatoes and Corned Beef:
  1. Mix in the chopped corned beef and potatoes.
  2. Spread the mixture evenly over the pan.
  3. Increase the heat to high or medium-high and press down on the mixture with a metal spatula.
Cook until Browned and Then Flip:
  1. Allow the potatoes and corned beef to brown without stirring.
  2. Listen for the sizzling sound, indicating browning.
  3. Use a metal spatula to check underneath for browning.
  4. If browned, flip sections over in the pan for browning on the other side. Press down again with the spatula.
  5. If sticking too much, add a little more butter.
  6. Continue cooking until both potatoes and corned beef are nicely browned.
Stir in the Parsley and Season:
  1. Remove from heat and stir in chopped parsley.
  2. Add plenty of freshly ground black pepper.
  3. Season with salt to taste.
