Method
- Melt chocolate until smooth. Sift together flour, cocoa, baking powder, and salt; set aside.
- Cream butter with sugars until smooth. Beat in eggs one at a time, then stir in coffee and vanilla. Stir in melted chocolate.
- Stir in dry ingredients until just combined. Let stand for 35 minutes.
- Preheat oven to 350°F (175°C). Line two cookie sheets with parchment paper.
- Roll dough into walnut-sized balls or drop by rounded tablespoonfuls onto prepared sheets, leaving space.
- Bake for 8 to 10 minutes. Centers will be soft. Cool on sheets for 10 minutes, then transfer to racks.
