- Preheat oven to 375°F. Grease an 8x8 glass baking dish; set aside.
- Remove cinnamon sugar from cookie mix pouch. Combine with apple pie spice in a small bowl. Reserve 2 tablespoons of the mixture.
- In a large mixing bowl, stir together cookie mix (excluding reserved mixture), softened butter, egg, and vanilla until well combined.
- Press half of the cookie mixture into the bottom of the prepared dish.
- Spread apple pie filling evenly over the cookie layer.
- Drop dollops of remaining cookie dough over the apple pie filling. Sprinkle reserved cinnamon sugar mixture on top.
- Bake for 45-50 minutes until golden and bubbly. Tent with foil if browning too quickly.
- Let cool for 5-10 minutes, then drizzle caramel sauce over the cobbler. Serve with ice cream if desired.
