Seafood Salad

Ingredients
  

  • 8 ounces imitation crab meat see note for using real crab meat
  • 12 ounces salad shrimp thawed
  • ½ small red onion finely diced
  • 2 stalks celery diced
  • ¾ cup mayonnaise light mayonnaise can be used
  • 1 tablespoon lemon juice
  • 2 teaspoons Old Bay Seasoning
  • ½ tablespoon fresh dill or ½ teaspoon dried dill
  • ½ teaspoon kosher salt adjust if using table salt, start with half the amount
  • Black pepper to taste

Method
 

  1. In a large bowl, combine the imitation crab meat (broken up), salad shrimp, diced red onion, and diced celery.
  2. In a small bowl, whisk together the mayonnaise, lemon juice, Old Bay Seasoning, fresh dill, and salt. Taste and adjust seasoning, adding black pepper to taste.
  3. Pour the dressing over the crab meat, shrimp, onion, and celery mixture.
  4. Gently toss until all ingredients are evenly coated with the dressing.
  5. Serve immediately or store the salad in an airtight container in the refrigerator for up to four days.
