  • 1 cup unsalted butter, softened Make sure your butter is softened for easier mixing.
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups rolled oats
  • 1 cup Rice Krispie cereal
  • 1 cup shredded coconut
  • 1 cup chocolate chips You can use any type of chocolate chips you like.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In another bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients until just combined.
  • Fold in the rolled oats, Rice Krispie cereal, shredded coconut, and chocolate chips.
  • Drop spoonfuls of dough onto ungreased baking sheets, spacing them about 2 inches apart.

Baking

  • Bake for 10-12 minutes, or until the edges are golden but the centers are still soft.
  • Let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Notes

Store your Ranger Cookies in an airtight container at room temperature for about a week. You can freeze them too, just make sure to wrap them tightly. Don't overbake the cookies; they should be golden at the edges but soft in the middle. Feel free to experiment with your favorite mix-ins!
