  • 1 cup unsalted butter, softened Make sure your butter is softened for easier mixing.
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups rolled oats
  • 1 cup Rice Krispie cereal
  • 1 cup shredded coconut
  • 1 cup chocolate chips You can use any type of chocolate chips you like.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Fold in the rolled oats, Rice Krispie cereal, shredded coconut, and chocolate chips.
  6. Drop spoonfuls of dough onto ungreased baking sheets, spacing them about 2 inches apart.
Baking
  1. Bake for 10-12 minutes, or until the edges are golden but the centers are still soft.
  2. Let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Notes
