Equipment

  • - Fluted tube cake pan
  • - Electric mixer
  • - Heatproof serving plate

Ingredients

  • 2 tablespoons butter melted
  • 1/4 cup packed brown sugar
  • 6 pineapple slices in juice from a 20-oz can, drained, juice reserved
  • 6 maraschino cherries without stems drained
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 1/3 cup vegetable oil
  • 4 eggs

Instructions

  • Heat the oven to 350°F (175°C). Generously spray a 12-cup fluted tube cake pan with baking spray with flour.
  • Pour the melted butter evenly in the bottom of the pan. Sprinkle brown sugar evenly over the butter. Place pineapple slices over the sugar, pressing them in lightly. Place one cherry in the center of each pineapple slice.
  • Add enough water to the reserved pineapple juice to measure 1 cup.
  • In a large bowl, beat the cake mix, pineapple juice, oil, and eggs with an electric mixer on medium speed for 2 minutes, scraping the bowl occasionally.
  • Pour the batter over the pineapple and cherries in the pan.
  • Bake for 36 to 41 minutes or until a toothpick inserted in the center comes out clean.
  • Remove from the oven and cool for 20 minutes. Run a metal spatula around the outer and inside edge of the pan to loosen the cake.
  • Place a heatproof serving plate upside down over the pan; turn the plate and pan over. Remove the pan.
  • Cool the cake for an additional 45 minutes. Serve warm or cool. Store loosely covered in the refrigerator.

Notes

- Ensure to generously spray the cake pan with baking spray to prevent sticking.
- Use the reserved pineapple juice to enhance the flavor of the cake batter.
- Allow the cake to cool for the specified times to ensure easy removal from the pan and optimal texture.
