Ingredients
  

For the Batter:

  • 2 cups flour
  • 1/4 cup corn starch
  • 2 teaspoons sugar
  • 2 teaspoons salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon onion salt
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground black pepper
  • 16 ounces club soda

For Frying:

  • 8 cups vegetable oil for frying

For the Fish:

  • 2 pounds cod or other white fish sliced into 3-ounce portions

Instructions
 

Preparing the Oil and Batter:

  • Heat approximately 8 cups of vegetable oil to 350°F in a fryer or heavy pot.
  • Create the batter by combining flour, corn starch, sugar, salt, baking powder, baking soda, onion salt, paprika, and ground black pepper. Stir to ensure thorough mixing.
  • Pour club soda into the dry ingredients while continuing to stir, allowing the batter to foam.

Frying the Fish:

  • Coat fish pieces with the prepared batter, ensuring they are evenly coated.
  • Carefully drop the battered fish into the hot oil.
  • Fry for 2 to 3 minutes until the batter turns golden brown and the fish pieces start to float to the top of the oil.

Draining and Serving:

  • Remove the fried fish from the oil and drain them on a wire rack to remove excess oil.
  • Serve the deliciously crispy fish hot and enjoy!

Notes

To prevent the batter from adhering to the bottom of the basket, gently lower the fish and hold it for a few seconds to let a crust form before releasing it into the basket.
For a delicious flavor variation, consider substituting club soda with beer.
If you find yourself with extra batter, you can use it to coat sliced onion rings and make onion rings as well.
