- In a food processor, combine chickpeas, tahini, olive oil, garlic, lemon juice, and salt. Blend until smooth and creamy. Adjust seasoning to taste.
- Transfer the hummus to a serving plate and spread it evenly.
- In a bowl, mix together the cucumbers, tomatoes, red onions, olives, feta, parsley, olive oil, red wine vinegar, salt, and pepper to create the topping.
- Pile the Greek salad mixture on top of the hummus, creating a colorful layer.
- Serve the Loaded Mediterranean Hummus with pita chips or fresh veggies for dipping.
Notes
Use fresh ingredients for the best taste. Feel free to add any of your favorite toppings like avocado or roasted red peppers. If you like your hummus creamier, add a little more olive oil or water. Store any leftovers in an airtight container in the refrigerator for about 3 days. Give it a stir before serving again.
