- Season chuck roast with salt and pepper. Heat olive oil in a large skillet over high heat. Sear roast until browned, about 4 minutes per side.
- Transfer roast to the slow cooker. Sprinkle dry onion soup mix on top. Pour water over the roast. Add chopped carrots, potatoes, onion, and celery.
- Cover and cook on Low for 8 to 10 hours.
