Ingredients
  

  • - 4 pounds chuck roast
  • - Salt and pepper to taste
  • - 2 tablespoons olive oil
  • - 1 packet dry onion soup mix
  • - 1 cup water
  • - 3 carrots chopped
  • - 3 potatoes peeled and cubed
  • - 1 onion chopped
  • - 1 stalk celery chopped

Method
 

  1. Season chuck roast with salt and pepper. Heat olive oil in a large skillet over high heat. Sear roast until browned, about 4 minutes per side.
  2. Transfer roast to the slow cooker. Sprinkle dry onion soup mix on top. Pour water over the roast. Add chopped carrots, potatoes, onion, and celery.
  3. Cover and cook on Low for 8 to 10 hours.

Notes

- For extra flavor, you can add garlic cloves or fresh herbs such as thyme or rosemary.
- Adjust cooking time based on desired level of tenderness for the roast.
- Serve with crusty bread or over mashed potatoes for a satisfying dinner.
