Ingredients
  

  • - 4 pounds chuck roast
  • - Salt and pepper to taste
  • - 2 tablespoons olive oil
  • - 1 packet dry onion soup mix
  • - 1 cup water
  • - 3 carrots chopped
  • - 3 potatoes peeled and cubed
  • - 1 onion chopped
  • - 1 stalk celery chopped

Instructions
 

  • Season chuck roast with salt and pepper. Heat olive oil in a large skillet over high heat. Sear roast until browned, about 4 minutes per side.
  • Transfer roast to the slow cooker. Sprinkle dry onion soup mix on top. Pour water over the roast. Add chopped carrots, potatoes, onion, and celery.
  • Cover and cook on Low for 8 to 10 hours.

Notes

- For extra flavor, you can add garlic cloves or fresh herbs such as thyme or rosemary.
- Adjust cooking time based on desired level of tenderness for the roast.
- Serve with crusty bread or over mashed potatoes for a satisfying dinner.
