- Melt butter in a skillet over medium heat. Sauté onion until soft. Add garlic, cook for 1 minute. Whisk in flour, cook for 2 minutes. Alternate whisking in broth and cream. Simmer until thickened, add spinach until wilted. Season and remove from heat.
- Cook lasagna noodles as per package instructions. Drain well.
- Preheat oven to 350 degrees. Mix ricotta, egg, Parmesan, 2 cups mozzarella, and Italian seasoning in a bowl.
- Layer the baking dish starting with white sauce, then noodles, 1/3 sauce, half the chicken, half the cheese mixture; repeat. Top with remaining noodles, sauce, and 1 cup mozzarella.
- Cover with foil, bake for 30 minutes. Uncover, bake for another 15-20 minutes. Optional: garnish with parsley.
