  • 2 cups fresh cranberries Use fresh cranberries for the best flavor.
  • 1/2 cup diced onion
  • 1/2 cup chopped cilantro
  • 1 jalapeño, seeded and minced Add less if you prefer less spice.
  • 1/4 cup sugar Adjust to taste.
  • 1 lime, juiced
  • Salt to taste

Preparation

  • In a food processor, combine the fresh cranberries, diced onion, chopped cilantro, jalapeño, and lime juice.
  • Pulse the mixture until the cranberries are finely chopped but not pureed.
  • Add in the sugar and salt, and pulse again to mix everything together. Adjust the sweetness by adding more sugar if desired.
  • Transfer the salsa to a bowl, cover, and let it chill in the refrigerator for at least an hour to allow the flavors to meld.
  • Serve with tortilla chips or as a topping for your favorite dishes.

Notes

Keep any leftover salsa in an airtight container in the refrigerator. It should stay fresh for up to 3 days. Just give it a little stir before serving again. You can add diced avocado for a creamy texture or mix in a bit of diced pineapple for a tropical twist. If you prefer less spice, you can skip the jalapeño.
