Ingredients

  • 2 cups fresh cranberries Use fresh cranberries for the best flavor.
  • 1/2 cup diced onion
  • 1/2 cup chopped cilantro
  • 1 jalapeño, seeded and minced Add less if you prefer less spice.
  • 1/4 cup sugar Adjust to taste.
  • 1 lime, juiced
  • Salt to taste

Method
 

Preparation
  1. In a food processor, combine the fresh cranberries, diced onion, chopped cilantro, jalapeño, and lime juice.
  2. Pulse the mixture until the cranberries are finely chopped but not pureed.
  3. Add in the sugar and salt, and pulse again to mix everything together. Adjust the sweetness by adding more sugar if desired.
  4. Transfer the salsa to a bowl, cover, and let it chill in the refrigerator for at least an hour to allow the flavors to meld.
  5. Serve with tortilla chips or as a topping for your favorite dishes.

Notes

Keep any leftover salsa in an airtight container in the refrigerator. It should stay fresh for up to 3 days. Just give it a little stir before serving again. You can add diced avocado for a creamy texture or mix in a bit of diced pineapple for a tropical twist. If you prefer less spice, you can skip the jalapeño.
