- In a food processor, combine the fresh cranberries, diced onion, chopped cilantro, jalapeño, and lime juice.
- Pulse the mixture until the cranberries are finely chopped but not pureed.
- Add in the sugar and salt, and pulse again to mix everything together. Adjust the sweetness by adding more sugar if desired.
- Transfer the salsa to a bowl, cover, and let it chill in the refrigerator for at least an hour to allow the flavors to meld.
- Serve with tortilla chips or as a topping for your favorite dishes.
Notes
Keep any leftover salsa in an airtight container in the refrigerator. It should stay fresh for up to 3 days. Just give it a little stir before serving again. You can add diced avocado for a creamy texture or mix in a bit of diced pineapple for a tropical twist. If you prefer less spice, you can skip the jalapeño.
