  • 1 lb ground beef
  • 1 can (10 oz) enchilada sauce
  • 1 can (4 oz) diced green chilis
  • 8 pieces flour tortillas Can substitute with corn tortillas
  • 2 cups shredded Cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • Salt and pepper, to taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the ground beef, along with the chopped onion and minced garlic, over medium heat until the meat is browned. Be sure to drain any excess fat.
  3. Stir in the enchilada sauce, diced green chilis, ground cumin, along with salt and pepper to taste.
  4. In a greased baking dish, layer your tortillas, followed by the beef mixture, and then a mix of the cheeses. Repeat these layers, finishing with a generous amount of cheese on top.
  5. Bake your casserole in the oven for 25-30 minutes or until the cheese is bubbly and golden brown.
  6. Once done, let it cool for a few minutes before serving.
