Preparation
- Preheat your oven to 350°F (175°C).
- Grease a 9x5-inch loaf pan with nonstick cooking spray.
- In a small bowl, mix the light brown sugar and ground cinnamon. Set aside.
- Toss the chopped apples with 2 tablespoons of granulated sugar and set aside.
- In a large mixing bowl, cream together the softened butter and the remaining granulated sugar until light and fluffy.
- Add the eggs to the butter mixture, one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and a pinch of salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
Baking
- Spread half of the batter in the prepared loaf pan.
- Sprinkle half of the cinnamon sugar mixture over the batter, followed by half of the chopped apples.
- Repeat this layering with the remaining batter, cinnamon sugar, and apples.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack.
- Once cooled, mix the powdered sugar with enough milk to reach a drizzling consistency and drizzle it over the bread before slicing.

Notes
