Ingredients

  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 1/2 cup diced celery
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup milk
  • 1 1/2 cups cooked shredded chicken
  • 1 1/2 cups chopped fresh spinach leaves
  • 16 ounces potato gnocchi
  • 1 cup shredded carrots
  • 1 teaspoon fresh thyme
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add onions and celery, and cook while stirring constantly for 2 minutes.
  • Add minced garlic and cook for an additional 30 seconds.
  • Sprinkle flour into the pot and whisk for 1 minute.
  • Whisk in chicken broth, cream, and milk. Bring to a simmer, whisking constantly, until the soup has slightly thickened, about 5 minutes.
  • Add chicken, spinach, gnocchi, carrots, thyme, salt, and pepper. Stir well.
  • Continue simmering for 10 minutes or until gnocchi and carrots are tender and cooked through.
  • Serve immediately.
